Chupe de olluco recipe
Olluco is a delicious tuber, rich in carbohydrates, which is often used in the preparation of different stews, stews and what is known as main dishes such as ajiaco de olluco. Chupe de olluco, typical of Peruvian cuisine, is a vegetable soup, an easy dish to prepare and that can be accompanied with a little ground rocoto pepper and a fresh drink.
Ingredients to make Chupe de olluco:
1 kilogram of Olluco chopped
1 kilogram of pumpkin grated
2 units of Corn (corn)
1 kilogram of peeled green beans
1 kilogram of peeled yellow potato
1 kilogram of fresh cheese chopped
1 cup of evaporated milk
3 branches of Huacatay
1 pinch of salt
1 pinch of Pepper
How to make Chupe de olluco:
Bring water to a boil in a large pot. When it comes to a boil, add the chopped olluco, squash and corn. Cook for 20 minutes.
After this time add the peeled beans and potatoes to the preparation. Let it cook over low heat until the vegetables are just cooked.
Once the chupe is ready, rectify the seasoning with salt and pepper to taste. Turn off the heat and add the huacatay, evaporated milk and diced cheese.
